Whole-animal butcher and grocery Bare Bones Butcher opened in mid-January 2018 in The Nations and has been receiving raves for its locally sourced meats as well as its small menu of sandwiches and beef fat-fried potatoes.

Craft beer available. Open 10 am-7 pm Wed-Sat, 9 am-3 pm Sun. Closed Mon-Tue.

“Piled with slices of rare meat, caramelized onions and horseradish cream sauce on rosemary-potato bread before being griddled, the roast beef is everything you’d want in such a sandwich. The pork might be even better — layered with braised greens, coins of pickled carrots and a dousing of pork jus on a sweet potato hoagie. Add a drop or two of hot sauce, made by chef Alex Grainger of Little Mosko’s to the mix — so dang good.”
