Drusie & Darr by Jean-Georges, part of the long-awaited and eagerly anticipated flagship restaurant at downtown’s historic The Hermitage Hotel, opened in mid-November 2021 hoping to reclaim the excellence and influence that marked its predecessor The Capitol Grille. Internationally celebrated chef and restaurateur Jean-Georges Vongerichten picked the hotel as his first-ever project in the Southeastern United States. Emphasis is on a seasonal menu inspired by Tennessee’s culinary heritage, with a wood-fired oven to crank out expertly prepared fare from chef-forward meats and produce to pizzas.
And no, the world-famous and photo-ready Art Deco men’s room adjoining the below-street-level dining room haven’t been touched.
