Once merely a Nashville treasure and now a national phenomenon, hot chicken reigns supreme at Prince’s Hot Chicken, honored by the prestigious James Beard Foundation as one of “America’s Classics” restaurants in 2013 and now with location with a location in South Nashville joining the legendary North Nashville original. Prince’s is owned and operated by Andre Prince Jeffries, whose heritage in the kitchen dates to her great-uncle Thornton Prince, whose girlfriend reputedly invented this style of heavily cayenne-spiced chicken as revenge when Thornton came home late after a night of carousing. But whattaya know: He loved the stuff! The spartan restaurant only has a few booths, and you’ll likely wait upward of 45 minutes from their time you order at the counter and when your food arrives. The wait is well worth it. Order the medium if you think you want the hot; mild if you want the medium; hot if you like playing with fire.
